Green Curry with Chicken Recipe

thumb_green-curry-with-chickenOne of the most common Thai dishes is the Green Curry with Chicken. Simple, spicy and tasty.

Green Curry with Chicken  
   
Ingredients  
Chao Koh Coconut Milk half can
Mae ploy Green Curry Paste 1 packet (50g)
Chicken Breast diced 1.5 cups
Vegetable Oil 2 tbsp
Water 1.5 cups
Eggplant(quartered) 1/2 cup
Palm Sugar 2 tsp
Kaffir Lime leaves  4 - 5 leaves
Red Chilli (shredded) 1 pod
Sweet Basil Leaves 1/4 cup
   
Directions  
1. Heat the oil in a wok. Add Mae Ploy Green Curry Paste and half cup of the Chao Koh Coconut Milk, stir fry until good aroma develops.
2. Put in the chicken and stir fry until meat is done. Add water and the rest of the coconut milk, heat until boiling.
3. Put in the eggplant and palm sugar.  
5. Add kaffir lime leaves, sweet basil leaves and red chilli
6. Transfer to serving bowl and serve with steamed rice.
